Monarch is our most intentionally designed blend, formulated to harmonize seamlessly with both traditional dairy and plant-based alternatives. Its unique blend features a naturally processed, sugar-dense coffee that intricately intertwines with fats, producing a decadent flavor profile accentuated by multiple layers of complex caramelization created during the roasting journey. Look for notes reminiscent of dark chocolate and the subtleties of lush, nearly winey berries that solidify why this blend reigns supreme.

Origin

Colombia

Colombia uniquely offers a diverse array of coffee varieties and processing methods. Known for innovation and resilience, Colombia's coffee history dates back to the early 19th century, with smallholder farmers being key contributors. Despite challenges like weather and conflict, Colombia consistently produces high-quality specialty coffee. For over a decade years, we've partnered with both large and small-scale producers from all five main growing zones, fostering close relationships and friendships.

Ethiopia

Ethiopia, the birthplace of coffee, has a rich history dating back to the 9th century. From its origins in Kaffa, coffee spread to the Arabian Peninsula and Europe, becoming a cultural mainstay. Ethiopia remains a top coffee producer, known for its diverse terroirs and quality. We partner with both large and small-scale producers, offering a range of profiles from classic washed to fruit-forward anaerobic naturals. Visiting Ethiopia for over a decade, we continue to be amazed by its beauty.

Elevation

1800 MASL

Elevation influences coffee cultivation, impacting flavor and quality. Higher elevations offer cooler temperatures, slowing the growth of coffee cherries, allowing more time for complex sugar and flavor development. This results in coffee with brighter acidity and a nuanced flavor profile. Additionally, cooler conditions at high altitudes reduce pests and diseases, making these coffees highly prized for their superior quality and distinct taste.

Variety

Harvest

Colombia

Colombia has a unique harvest schedule, thanks to the varied topography and proximity to the equator. Between those two variables, Colombia harvests nearly year round across the five main coffee growing regions. Each region has fairly reliable harvest times that conveniently stagger, providing fresh crop coffee all year round.

Ethiopia

The specialty harvest within East Africa takes place from early October through December and sometimes into January. As with all agriculture, the harvest times can vary due to factors like rainfall, average sunlight, and general temperature swings. We purchase from our relationships in East Africa once a year around January through February. The freshness season is extended well beyond most especially in Ethiopia. We source and land containers year round, thanks to the long voyage these coffees go on.

Process

Natural

This coffee cherry is fermented in the fruit following the process of hand-picking and selection. The fruit of the coffee tree is then dried for approximately twenty days on raised beds and patios. The processing impact in the final cup is noticeable, with flavor indicating fruit-forward signs of fermentation within the overall cup profile.

Prior to production, each roast goes through a rigorous dial-in process, where we fine-tune our temperature curves. We roast to tight tolerances, with no more than 1° deviation from target temperatures, ensuring quality and consistency in each batch.

#64.3 Expressive Dark

Referring to medium as moderate is an intentional choice to highlight the roasting process, which is also referred to as development. Coffees within the moderate range exhibit notes in line with terroir, with a hint of sugar-browning. These characteristics are backed by a medium to high perceived acidity with a balanced tactile and sweetness, and they adapt easily from espresso to filter preparation.

Our year-round rigorous sourcing allows us to have an evergreen blend with a flavor profile of high quality while retaining our commitment to seasonal coffees. This amount of cupping and blending takes a considerable amount of time, but we think it makes the difference and is a system we use for all our blends.
